Simply Vegan is a great starter cookbook for anyone who is transitioning to a vegan diet or exploring the possibility of becoming a vegan.

It is filled with easy to follow vegan recipes in all categories. It also has recipes broken down according to their nutritional value. The one thing I really like is the glossary which gives definitions and explanations of many of the ingredients used in vegan cooking. I definitely would recommend this book.
